Responsibilities

 

Dishwashing & Utensil Cleaning

Wash and sanitize all dishes, glassware, utensils, pots, and pans.Operate commercial dishwashing machines and ensure proper chemical usage per the operating guidelines of the machinery.

Kitchen Equipment Cleaning

Clean and maintain kitchen equipment such as grills, fryers, ovens, walk in refrigerator, walk in freezer, and other heavy duty equipment.Ensure all surfaces and tools are sanitized in accordance with health regulations.

Trash & Waste Management

Separate recyclables, compost, and standard waste properly.Empty garbage bins regularly and dispose of waste according to hotel and environmental guidelines.Keep trash cans clean and wiped clean to prevent mold and fly harboring conditions.Ensure loading dock/trash area is kept organized and clean.

Floor & Surface Maintenance

Sweep and mop kitchen floors throughout the day and after closing.Clean spills promptly to prevent slips and maintain safety.

Restocking & Supply Management

Assist with restocking food from main kitchen to restaurant level kitchen during service as needed.Replenish clean dishes, utensils, and kitchen tools to appropriate stations as needed.Assist with receiving and organizing kitchen deliveries, as required, by supervisor.Support banquet or room service operations with dishware or equipment as needed.

Sanitation Compliance

Follow all hygiene and safety standards as required by the hotel and health department (NYC DOH and HAACP)Use personal protective equipment (PPE) when handling chemicals or waste.

Inventory & Supplies Monitoring

Notify supervisors when cleaning supplies or chemicals are running low.Ensure safe storage of cleaning materials and chemicals per guidelines.

Adherence to Hotel Policies

Communicate with Housekeeping and Engineering for maintenance issues as well as informing supervisor.Know the location and operation of all fire extinguishing equipment. 

End-of-Shift Duties

Conduct final cleaning of kitchen and stewarding areas.Ensure dish machine is completely clean and tidy without leftover items to clean.Assist with closing checklists and secure storage of equipment. Qualifications High School diploma or equivalent and/or experience in a hotel or a related field preferred.Flexible and long hours sometimes required.Heavy work - Exerting up to 100 pounds of force occasionally, and/or 50 pounds of force frequently and/or up to 20 pounds of force constantly to lift, carry, push, pull or otherwise move objects.Ability to stand during entire shift.Ability to withstand temperature variations, both hot and cold.Maintain a warm and friendly demeanor at all times.Must be able to effectively communicate both verbally and written, with all level of employees and guests in an attentive, friendly, courteous and service oriented manner.Must be effective at listening to, understanding, and clarifying concerns raised by employees and guests.Must be able to multitask and prioritize departmental functions to meet deadlines.Approach all encounters with guests and employees in an attentive, friendly, courteous and service-oriented manner.Attend all hotel required meetings and trainings.Maintain regular attendance in compliance with Highgate Hotel Standards, as required by scheduling, which will vary according to the needs of the hotel.Maintain high standards of personal appearance and grooming, which includes wearing the proper uniform and nametag.Comply with Highgate Hotel Standards and regulations to encourage safe and efficient hotel operations.Maximize efforts towards productivity, identify problem areas and assist in implementing solutions.Must be effective in handling problems, including anticipating, preventing, identifying and solving problems as necessary.Must be able to understand and apply complex information, data, etc. from various sources to meet appropriate objectives.Must be able to show initiative, including anticipating guest or operational needs.Perform other duties as requested by management.
