Reporting line: Reports to Executive (sous)-chef Job Profile: The Sous Chef plays a key role in the culinary team, assisting the Executive Chef in overseeing kitchen operations and maintaining culinary excellence. This position requires strong culinary skills, leadership abilities, and a passion for delivering exceptional dining experiences. The Sous Chef collaborates with the Executive Chef in menu planning, food preparation, and ensuring the highest standards of quality, consistency, and guest satisfaction. Core Work Activities: 1. Health and Safety Compliance Additional Responsibilities: Managing the Guest Experience: • Reviews guest feedback with leadership team and ensures appropriate corrective action is taken. • Responds to and handles guest problems and complaints. • Stays visible and interfaces with customers on a regular basis to obtain feedback on quality of product, service levels and overall satisfaction. • Creates an atmosphere in all Food and Beverage areas that meets or exceeds guest expectations. • Drive guest experience, service recovery and service requests – ensuring quality service and guest satisfaction. • Utilize all property platforms and applications to drive guest experience and brand standards. Managing Profitability/ Budget Management: • Participates in the budgeting process for areas of responsibility. • Works with property and regional F&B leadership team to determine how F&B is performing against budget and highlights areas of concern to leadership. • Manages areas of operation to budget by reviewing operating statements, budget worksheets and payroll progress reports. • Monitors and manages the payroll function. • Participates in the development of department's capital expenditure goals; manages projects as needed. • Prepares weekly and period end P&L critiques. • Reviews and manages controllable expenses such as bar & restaurant supplies, tableware/smallware, contract labor, etc…. • Coaches and supports F&B leadership team to effectively manage controllable expenses. Managing and Conducting HR Activities: • Ensures employees are treated fairly and equitably. • Ensures that regular, ongoing communication is happening in operations (e.g., pre-shift briefings, staff meetings). • Fosters employee commitment to providing excellent service, participates in daily stand-up meetings and models desired behaviors in all interactions with guests and employees. Incorporates guest satisfaction as a component of staff/operations meetings with an emphasis on generating innovative ways to continually improve results. • Sets goals and expectations for direct reports using the performance review process and holds staff accountable for successful performance. Qualifications: • Proven experience as a Sous Chef or in a similar culinary leadership role. • Culinary degree or equivalent certification is required. • Extensive knowledge of culinary techniques, flavor profiles, and food presentation. • Strong leadership skills with the ability to motivate and inspire a team. • Excellent communication, interpersonal, and problem-solving abilities. • Detail-oriented with strong organizational and time management skills. • Understanding of food costing, inventory management, and financial controls. • In-depth knowledge of food safety and sanitation regulations. • Creative mindset with a passion for culinary excellence. • Flexibility to work in shifts, including evenings, weekends, and holidays. • Valid Health card _This company is an equal opportunity employer._ frnch1 At Renaissance Hotels, we believe in helping our guests experience the DNA of the neighborhoods they are visiting.
