Hyatt Regency London Olympia will be part of a major redevelopment project transforming Olympia, London's historic convention centre built in 1873, into a comprehensive convention, entertainment, and cultural district in West London. Anchored by the iconic glass barrel-vaulted roofs of the Grand and National Halls, the new 14-acre site will feature a boutique multi-screen arthouse cinema, a 4,000-capacity music and performing arts venue, a 1,500-seat theatre, a rooftop sky garden, as well as restaurants, shops, cafés, and office and co-working spaces.
Hyatt Regency London Olympia will offer 204 rooms, a bar and restaurant, as well as a lobby lounge. Additionally, there will be 3 meeting rooms and direct connectivity to the London Olympia Convention Centre.
Duties and responsibilities related to the Sous Chef role
Foster collaboration within the culinary department, leveraging collective knowledge to enhance operations. Mentor and coach colleagues to maximise engagement and ensure smooth functioning.Oversee the seamless operation of meal services.Implement measures to minimise waste, aligning with budgetary constraints and sustainability goals.Stay informed about seasonal produce, new products, and culinary trends, incorporating this knowledge into menu planning and execution.Ensure meticulous presentation and garnishing of dishes before they are served.Enforce strict adherence to hygiene and sanitation guidelines, overseeing proper handling, maintenance, and use of equipment and utensils.Utilise multi-skilling, multi-tasking, and flexible scheduling techniques to maximise productivity. This approach aims to meet the financial objectives of the department while exceeding guest expectations.About you
Proven experience in luxury culinary operations, demonstrating strong leadership and management skills to motivate and inspire a team. Possess extensive knowledge of food and beverage trends, industry best practices, and regulatory requirements.
