Senior Director, Corporate Food and Beverage

General Purpose:

The Senior Director of Corporate Food and Beverage is a strategic leader responsible for ensuring the success of food and beverage operations across a diverse portfolio of properties. The role is designed to amplify the team by fostering growth, high performance, and development within the food and beverage division. Working closely with VPs and General Managers, this position ensures seamless execution of operational strategies and optimal outcomes. Effective resource management, both human and financial, will be a key focus to drive exceptional results. This role demands accountability at every level, guaranteeing that operations meet or exceed financial, service, and client satisfaction goals while maintaining a culture of continuous improvement and high standards.

Key Responsibilities:

Operational Oversight: Lead daily operations and communications within the food and beverage division, ensuring optimal efficiency and service excellence. Team Leadership: Manage a team of Directors, Managers, and support roles, offering guidance, performance reviews, and developmental opportunities. Budget Management: Oversee budget allocation to ensure the division meets or exceeds financial goals. Delivering Exceptional Experiences: Maintain the highest service standards, monitor satisfaction metrics, respond to feedback, and align food and beverage goals with client expectations. Collaboration: Partner with marketing, procurement, and operations teams to drive strategic initiatives. Build strong communication channels with property VPs and operational leaders. Company-wide Partnerships and Initiatives: Implement strategic initiatives and continuously support partnerships and client relationships.

Essential Duties:

Strategic Alignment: Collaborate with facility VPs to align food and beverage strategies with overall club goals and objectives. Client and Stakeholder Engagement: Foster relationships with key stakeholders, including owners, boards, and committees. Extensive Travel: Travel (100+ days per year) to engage with clients, leaders, and teams, ensuring operational success and relationship fostering strong relationships. F&B Strategy: Define, execute, and refine food and beverage strategies, aligning them with the overall property and club objectives. Performance Monitoring: Analyze KPIs and operational performance to identify opportunities for improvement. Leadership Development: Identify high-potential talent, facilitating career growth and promotion from within Troon’s F&B portfolio. Training & Compliance: Oversee club-level training programs, ensuring the successful execution of operational standards and compliance with all legal requirements. Vendor Relations: Strengthen vendor partnerships and leverage corporate resources to optimize operations. Corporate Initiatives: Actively participate in corporate events, summits, and networking opportunities, contributing to the organization’s growth and development.

Education/Experience:

Minimum of 8 years of experience in high-level F&B operations management, including property, hotel, or club management. Multi-unit restaurant experience is a plus. Proven leadership in managing top-performing culinary teams.

Certificates/Licenses:

ServSafe Certified (Food & Alcohol) or TIPS equivalent.

Key Skills and Abilities:

In-depth knowledge of regional and international foods, wines, spirits, and beers. Expertise in both back-of-house and front-of-house operations. Strong understanding of F&B metrics, including COGS, labor management, sales metrics, KPI measurement, and P&L analysis. Excellent leadership and communication skills, with the ability to inspire and manage high-performing teams. Strong problem-solving and decision-making skills at both strategic and functional levels. Ability to manage multiple priorities, deadlines, and clients efficiently. Exceptional active listening, client service, and conflict-resolution skills. Strong organizational development focuses on supporting individual and team advancement. Proficiency in Microsoft Office Suite (Word, Excel, PowerPoint, Outlook). Strong financial acumen for budgeting, forecasting, and P&L management. Knowledge of food and beverage service equipment and trends. Fluent in English, both written and verbal.
