· Be part of a first-of-its-kind hotel –This is Hyatt’s first Caption hotel in Australia, and as part of the pre-opening team, you’ll gain valuable experience shaping a new brand from the ground up.
· Build the foundations –From setting up purchasing systems to establishing supplier partnerships, you’ll help lay the groundwork that supports every team and every guest experience.
· Collaborate across departments– Work closely with teams in FB, Housekeeping, Engineering, and Finance to ensure the right products are in place to deliver a seamless guest experience.

About the Role
As our Purchasing Officer, you’ll play a key role in the pre-opening setup of Caption by Hyatt Central Sydney — laying the groundwork for our purchasing and stock control systems before the first guest even walks through the door.
In this position, you will oversee the procurement and materials operations across all departments, by ensuring all good and services are efficiently sourced, received and distributed. Additionally, you will assist coordinating supplier relationships, lead stock takes, and ensure materials are sourced efficiently and in line with brand standards.
Some Key Responsibilities
Support the pre-opening setup by assisting in sourcing suppliers, preparation of purchase orders, coordinating deliveries, cataloguing all inventory and supporting stock reconciliation.Liaise with department heads to fulfil procurement needs in timely and cost-effective manner.Assist with the day-to-day purchasing of goods and services in accordance with approved requests, specifications, budgets, and brand standards.Process and enter purchase orders, invoices, goods received, and other documentation accurately in relevant systems (e.g, Birchstreet).Coordinate with suppliers to resolve order discrepancies and arrange substitutes for out-of-stock itemsOversee the accurate receipt and inspection of goods, ensuring quantity, quality, and compliance with specifications.Manage distribution of received goods to appropriate departments promptly and correctly.Maintain storerooms and receiving areas in a clean, organised, and compliant manner to meet food safety (HACCP) and WHS standards.Assist with monthly and ad-hoc stocktakes including counting, reconciliation, variance investigation, and report generation.What you will bring to the role:
Has solid, hands-on experience in procurement or purchasing.Is highly organised, and has strong attention to detail.Can positively build and sustain relationships with both internal and external stakeholders.Able to handle heavy and continuous lifting, with a methodical and efficient approach.Can manage multiple priorities and projects in a fast-paced, pre-opening environment.Works collaboratively with other teams and can competently work independently.Communicates with clarity and confidence.Wants to be part of a respectful, down-to-earth team culture built on trust, teamwork, and shared success.Full working Australian working rights, with flexibility for scheduling (early mornings and occasional weekend work).What’s in it for you:
