Production Operator

Evendale Bakery - Cincinnati, Ohio

Non-exempt Position – Full Time


The Production Operator is responsible for following set standards and practices to produce a quality baked White Castle bun. The duties include, but are not limited to, machine operation, quality assurance, safety, GMPs and fork truck operation. Each Production Operator works together and simultaneously and performs different duties to achieve the end result. Production Operators are expected to uphold and demonstrate the Company’s Core Values. This position description does not contain a comprehensive list of required duties and responsibilities. The incumbent is expected to perform related duties assigned by management, which may be added, revised, or eliminated based on business and operational needs, with or without advance notice. 


What we are looking forHigh School Diploma or GED required;Previous training and experience in the baking industry obtained through education or experience is preferred;Must know how each piece of equipment operates and be able to function efficiently in any of the production line positions which is acquired through observation and hands on experience;Good interpersonal and human relations skills with ability to maintain a positive professional demeanor accepting responsibility and willingness to learn;Knowledge, training, and experience with production, sanitation, quality, and safety;Must have good verbal and written skills, be team oriented and work well with others, give, and receive direction, and follow clear and Efficiently work and respond in a fast-paced environment to meet operational demands;Possess the skill to diagnose production problems;Good understanding of HACCP, SSOP, GMPs, and knowledge of FDA regulations; andAbility to successfully complete on-the-job training.



What you will do:Operate mixer to produce consistent dough for development of the White Castle bun;Set ingredients meters, scales, timers for the proper amount of ingredients, mixing time and refrigeration times needed for the proper development and temperature of dough;Operate extruder to produce consistent dough pieces for development of the White Castle bun;Set belt timing, adjust dusting flour amount, and maintain flour in the sifters;Check, record, adjust dough ball weights as needed, and monitor;Final checker to ensure that there is no excessive flour in pans and that dough balls are properly panned;Keep equipment and work area clean while working in a safe manner;Operate packaging machine to bag and box all good quality baked product for palletizing and shipment;Palletize and operate fork truck to store packaged product for selection and shipment by the shipping department;Utilization of the WMS scanning system to get license plate stickers ready for the right skids;Preparation of skid, scanning license plate sticker on wrapped skid before placing in freezer, following the rotation system;Logging of buns stored with time, date, and operator’s initials;Assist packaging machine operator with changing bags and racking off product as needed;Carton stripping to sort through bad corrugated cartons for re-use in the box former;Possess the skill to operate a forklift;Perform housekeeping duties as needed;Rotation of jobs daily is required;Follow all company safety rules, GMP’s, SSOP’s, HACCPs, and any other procedures or regulations that are required;Comply with incident reporting policies and procedures;Adhere to Plant’s security and safety policies and procedures;Communicate effectively with customers and all levels of the organization in a professional manner, display a positive demeanor and be responsive to team members’ needs; andMust be flexible to work hours to meet the needs of the plant including any shift, overtime, weekends, and holidays.


PHYSICAL REQUIREMENTS/ENVIRONMENTAL FACTORS:

Ability to bend, turn, twist, climb, stoop, and stand;Frequent lifting up to 50 lbs. assisted;Capability to work in an environment with frequent exposure to flour dust, extreme cold, wet, hot, or dusty and other elements;Wearing of safety gear including safety glasses, and other various types of safety gear supplied by the company;Frequent periods of standing and walking; andAbility to hear, comprehend, and professionally respond to co-worker inquiries, comments, and concerns.
