Maintains the presses and dryers at the established parameters to produce pasta and noodles to customer specification. Monitors, adjusts and records product measurements to meet specifications. Checks for improper cut / shapes and makes corrections as needed. Maintains Quality Control paperwork as specified. Monitors the production equipment for failures. Provides knife management and preparation. Assists with changeovers and changeover sanitation. Washes dies. Weighs waste at end of shift and record weights on appropriate press sheet. Provides sanitation responsibilities. Sanitizes and stores dies, die rings, die screens in prescribed manner.
