We’re looking for a Pastry Sous Chef to help lead this space—someone who balances technical skill with creativity, and thrives in a kitchen where detail matters.

The Role
Working closely with the Executive Chef and Pastry Chef, you’ll support the day-to-day running of the pastry kitchen. You’ll guide the team, shape the offering, and ensure every plate that leaves the pass feels considered and complete.

What You’ll Do

Lead service across all pastry outlets, from breakfast to evening diningSupport menu development with a focus on seasonality and local influenceMaintain consistency, quality, and presentation across every dishTrain, mentor, and inspire junior chefsManage ordering, stock control, and kitchen organisationUphold food safety and hygiene standards with precision

Proven experience as a Pastry Sous Chef or strong Chef de Partie ready to step upA refined approach to pastry—technique-driven, detail-oriented, and creativeA natural leader who builds calm, focused teamsStrong understanding of modern dessert trends and classic foundationsThe ability to move with service while keeping standards highA genuine passion for hospitality and guest experience

Must already have full and ongoing working rights for Australia
