Il Picciolo Etna Golf Resort & SPA is an exclusive 5-star hotel located in the unique setting of the Mount Etna Park, operating under a prestigious franchise partnership with the Curio Collection by Hilton brand. Our mission is to offer unforgettable experiences that blend luxury, gastronomic excellence, and the charm of Sicily.

We seek a creative and highly skilled Pastry Chef to lead our pastry and bakery operations. The successful candidate will be responsible for setting new standards in dessert design, crafting exquisite creations for our two gourmet restaurants, three bars, and all special events, aligning with our premium brand image.

 

KEY RESPONSIBILITIES

The Pastry Chef will lead the Pastry Section, reporting to the Executive Chef and the Food & Beverage Manager.Production & Quality Control: Oversee the daily preparation and production of all pastries, desserts, ice creams, and baked goods for all hotel outlets, ensuring consistency and adherence to 5-star quality standards.Menu Development: Design and innovate dessert menus, combining classic Sicilian traditions with international fine dining techniques, focusing on high-quality ingredients and spectacular presentation.Cost Management: Maintain effective inventory control, manage food cost for the Pastry section, and ensure minimal waste, contributing to the financial performance of the F&B division.Team Leadership: Lead, train, and mentor the pastry team, fostering a creative and disciplined work environment that upholds strict hygiene (HACCP) and operational standards.Special Events: Coordinate and execute large-scale pastry requirements for banquets, weddings, and exclusive resort events.

Work Experience

REQUIRED SKILLS AND EXPERIENCE

Mandatory Experience: Proven experience of at least 3-5 years as a Pastry Chef or Head Pastry Cook, gained within 5-star hotels, luxury resorts, or high-end pastry establishments.Creativity and Technique: Exceptional technical skills in both classic and contemporary pastry, chocolate work, and bread making.Language: Good working knowledge of the Italian Language (mandatory) to communicate with the colleagues.Organizational Skills: Excellent planning abilities, capable of managing high-volume production schedules and maintaining organization under pressure.Flexibility: Availability to work a shift-based schedule covering 5 working days out of 7, including public holidays and weekends, based on the resort's operational needs.
