Job Summary:
The Full-Time Lead Expo plays a critical role in ensuring a smooth and efficient flow of service between the kitchen and front-of-house. This position is the communication hub during service, inspecting each plate for quality and presentation, calling out orders to the kitchen, and organizing tickets for timely delivery. The Lead Expo also provides guidance and training for other expo staff and food runners, ensuring consistency in standards and service excellence every day. This position also participates in the department tip pool, offering additional earning potential based on overall team performance.
Key Responsibilities
Service Flow & Coordination: Lead the pass during service, prioritizing and organizing tickets to ensure accurate, timely food delivery. Communicate clearly with chefs and FOH staff to coordinate timing for multi-course service. Ensure seat numbers and table positions are correctly assigned for every dish. Quality & Accuracy Control: Check each plate for correct presentation, temperature, portion size, and ticket accuracy before release. Identify and correct any errors with the chef prior to serving. Verify that all garnishes, sauces, and sides are included. Leadership & Training: Serve as the primary point of contact for expo operations during shifts. Train and mentor new expo team members and food runners. Lead by example in professionalism, efficiency, and teamwork. Communication & Efficiency: Maintain professional, solution-focused communication between BOH and FOH. Monitor ticket times and address delays proactively. Pace food delivery for large parties and special events. Organization & Cleanliness: Keep the pass stocked, clean, and organized throughout service. Rotate and replenish plates, ramekins, and smallware as needed. Follow all safety and sanitation procedures. Additional Support: Assist with food running as needed during high volume. Support FOH with table clearing or resetting if necessary. Minimum Qualifications: At least 6 months experience as an expo, food runner, or in a similar high-volume restaurant environment. Strong understanding of plating standards, timing, and food safety. Ability to thrive in a fast-paced environment while maintaining attention to detail. Reliable attendance and flexibility to work weekends, evenings, and holidays. Ability to lift 25–50 lbs and stand/walk for long periods.
