PCSI is looking for A Lead Cook. A Lead Cook for Ft. Hood. This position will report to the Assistant Dining Facility Manager. Typical work hours for Ft. Hood (Main Post) are Mon - Fri 5:00am-2:00pm & 10:30am - 7:30pm, Sat & Sun 7:00am - 3:30pm. Typical work hours for North Fort Hood are Sun-Sat 4:00am-12:30pm & 12:00pm - 8:30pm

Benefits Include:

Base pay $22.35hr depending upon experience. additional allowance every hour worked:  uniform $0.15, Shift differential$0.20 after 1:00pm. Health/Welfare benefits for medical coverage and dependent coverage (at no additional cost) Pension

What You will do as a Lead Cook:

Supervisory position involving responsibility for all phases of a Food Service operation, producing quality meals for Military and civilian diners. Works side by side, trains, instructs, demonstrates, monitors and evaluates food service cooks in correct and sanitary procedures of food preparation and their daily duties Responsible for preparation of meals in dining facility assigned. With the guidance of management personnel, plan items to prepare and schedule the work assigned to food service cooks. Check production schedule to determine variety and quantity of goods to prepare. Weight and measure ingredients using measuring tools. Prepare meats, starches, vegetables and fruits for service in an army dining facility. Other food preparation includes: soups, gravies, and sandwiches; bake pies, cookies, and cake; slice meat, cut, peel, and prepare fruits and vegetables; prepare sauces, custards and Jell-O’s. Serve food on the cafeteria line to soldiers and civilians in a courteous manner. Maintain inventory records and properly measure food amounts, as required. May be required to convert recipe cards standardized at one-hundred portions to lesser or greater amounts. Observe company safety procedures and standards insuring a safe working environment for oneself, co-workers, customers, and property. Establish and maintain effective working relationships with co-workers, supervisors, and members of the military armed forces regardless of race, color, creed, religion, marital status, sex, age, or physical/mental disability. Complete cleaning tasks using developed cleaning SOP’s (Standard Operating Procedures) including designated processes, materials and equipment. Serve on various employee committees as required and assigned.

What You'll Need to Be Successful:

High school diploma or equivalent; and some specialized training in high volume feeding. Three (3) years of related experience, or any equivalent combination of education and experience. SERV Safe qualified at time of application strongly preferred.

Knowledge, Skills and Abilities:

Thorough knowledge of safety principles and practices as related to cleaning and food preparation. Knowledge of the principles and practices of sanitation and personal hygiene as applied for food preparation and services. Thorough knowledge of safe handling of foods. Thorough knowledge of procedures for safe handling of all chemicals related to job and protective gear when working with chemicals. Become knowledgeable in the usage of (SDS) Safety Data Sheets. General knowledge of employee motivation, leadership, and supervision techniques. Ability to instruct and train food service cooks in the correct procedures of food preparation and sanitation. Ability to plan, schedule and supervise the work of a small staff. Knowledge of the methods, procedures, materials and equipment involved in a large-scale preparation of food. Ability to reach with hands and arms, use hands to finger, handle, feel or operate objects, tools, or controls. Ability to lift heavy objects, walk and stand for long periods of time. Occasionally required to sit; climb or balance; stoop, kneel, crouch, or crawl; and talk or hear. Skill in operation of listed tools and equipment. Ability to work independently and to complete daily activities according to work schedule. Ability train employees on duties assigned Must have keen senses to evaluate food products. This position is generally considered a light to medium duty job. Must frequently lift and/or move up to 25 pounds and occasionally lift and/or move more than 100 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Ability to understand and follow written and oral instructions. Ability to assist and communicate with others as needed and establish effective working relationships. Ability and willingness to exert disciplinary action as needed. Ability to delegate tasks to staff and ensure assigned tasks are completed.

Other Duties:

Ability to pass criminal, drug, and driving screening. Ability to work near moving mechanical parts. Ability to work any time or day of the week, including weekends and holidays. Ability to use general commercial kitchen equipment including mixing machines, blenders, deep-fat fryers, and convection/conventional ovens, etc. May be required to work long periods of time while occasionally standing under conditions of high temperature. Possess valid driver’s license and maintain good driving record. If required, ability to obtain and maintain security clearance and base access to assigned site(s).
