Junior Sous Chef - Middle Eastern Cuisine

You will assist in the kitchen, contributing to the overall success of the outlet by delivering authentic Middle Eastern cuisine, in accordance with the hotel’s standards and financial goals.

Main DutiesAdministrationAssists to ensure that culinary activities are aligned with the respective Corporate Strategy, and that the Hotel Actions have been implemented where appropriate.Assists in the preparation and updates of individual Departmental Operations Manuals.Assists to conduct regular communications meetings and ensure that departmental briefings and meetings are effective and conducted as necessary.Customer ServiceProvides a courteous and professional service at all times.Ensures that associates also provide excellent service to internal customers in other departments as appropriate.Handles guest and associate enquiries in a courteous and efficient manner, reporting complaints or problems if no immediate solution can be found, whilst providing a prompt follow-up.Maintains positive guest and colleague interactions with good working relationships.Engages with guests to explain the cultural significance of Middle Eastern dishes and ingredients when appropriate.FinancialMaximises associate productivity through multi-skilling, multi-tasking and flexible scheduling to meet financial goals and guest expectations.Prudently manages utility/payroll costs within acceptable guidelines ensuring optimum deployment and energy efficiency.Embraces new technology and equipment to improve productivity and streamline operations.MarketingContinuously seeks ways to assist the outlet management to maximise revenues and profits through innovative Middle Eastern recipes and themed promotions.Supports the creation of unique culinary experiences and events that showcase Middle Eastern cuisine and culture.OperationalEnsures that all company minimum brand standards have been implemented.Ensures authenticity in the preparation and presentation of Middle Eastern dishes, maintaining cultural integrity and flavor profiles.Sources high-quality, authentic Middle Eastern ingredients, maintaining relationships with specialty suppliers.Collaborates with the Chef de Cuisine to develop and refine Middle Eastern menus that reflect seasonal availability and guest preferences.Reviews menus, analyses recipes, determines food, labour, overhead costs and assigns prices to menu items.Directs food apportionment policy to control costs.Serves fresh food prepared à la minute, consistent in quality and reflective of the outlet concept.Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.Tests cooked foods before plate-up and service.Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies.Devises special dishes and develops innovative Middle Eastern recipes.Establishes and enforces nutrition and sanitation standards for the outlet kitchen.Encourages the team to support Food and Beverage Division’s marketing and up-selling activities.Assists in implementing all Touches of Hyatt and the Food and Beverage Top 20.Responds to Consumer Audit results and ensures relevant changes are implemented.Food Safety HygieneEstablishes, controls and maintains the highest level of hygiene throughout the kitchen according to ISO22000 guidelines.Ensures compliance with halal food preparation standards and maintains documentation as required.Attends all Food Safety and Hygiene trainings as required by ISO22000 and ensures all team members do the same.PersonnelAssists in the recruitment and selection of kitchen associates using a competency-based approach.Closely supervises kitchen associates to ensure performance aligns with policies and applicable laws.Oversees punctuality and appearance of all kitchen associates, ensuring correct uniform and grooming standards.Delegates duties appropriately, nurturing and developing team members while maintaining operational standards.Trains and mentors kitchen staff on Middle Eastern cooking methods, spices, and presentation styles.Coordinates training programmes with the Training Manager and Departmental Trainers.Encourages creativity and innovation, recognizing contributions to the success of the operation.Conducts annual Performance Development Discussions and supports professional development goals.Supports implementation of The People Philosophy, demonstrating Hyatt’s Values and Culture Characteristics.Ensures associates understand and adhere to rules and regulations.

Diploma or degree in Culinary Arts or a related field.

Minimum 3–5 years of experience in a professional kitchen, including at least 1–2 years in a supervisory role. Prior experience in preparing authentic Middle Eastern dishes in a luxury hotel or fine dining environment is highly desirable.

Passionate about Middle Eastern culinary traditions and innovation.Ability to plan menus, cost recipes, and manage kitchen operations efficiently.Strong leadership, communication, and interpersonal skills.Proficiency in English is required; knowledge of Arabic or other Middle Eastern languages is an advantage.
