We are seeking a **Butcher Cook III** who takes pride in precision, quality cuts, and supporting a high-performing culinary team.
In this role, you will be responsible for the **daily fabrication, trimming, and portioning of meats, poultry, seafood, and game** that supply our restaurants, banquets, and in-room dining. This position plays a key role in ensuring that every outlet receives proteins that meet Hyatt’s standards for **quality, consistency, and food safety** .

**What You’ll Do**
• Fabricate, trim, and portion **beef, pork, poultry, lamb, seafood, and game** to exact specifications.
• Support all resort outlets including **Osteria Sierra, Cutthroat’s Saloon, Banquets, and In-Room Dining** .
• Maintain proper **labeling, rotation, and storage** following Hyatt food safety and FIFO standards.
• Safely operate and maintain butchery equipment including **band saws, grinders, slicers, vacuum sealers, and knives** .
• Prepare specialty cuts and pre-portioned proteins to support restaurant and banquet operations.
• Monitor **daily production levels and par sheets** to ensure kitchen readiness.
• Reduce waste through efficient yields and creative use of trim for stocks and specials.
• Maintain a **clean, organized butcher shop and walk-in areas** .
• Assist with **inventory counts, temperature logs, and food safety compliance** .
• Communicate product quality or supply concerns with the Chef team.
**Qualifications:**
**What We’re Looking For**
• **2 years of professional butchery or culinary experience** (resort or high-volume kitchens preferred).
• Strong knowledge of **primal and sub-primal cuts, portioning, and yield management** .
• Excellent **knife skills and attention to detail** .
• Ability to follow detailed production specifications and recipes.
• Commitment to **food safety, cleanliness, and kitchen organization** .
• Ability to **lift up to 50 lbs** , stand for extended periods, and work in refrigerated environments.
• Flexibility to work **weekends, holidays, and varied schedules** .
• Culinary degree or certification preferred but not required.
