Dover Marina Hotel & Spa, requires a Food & Beverage Manager to manage Mr Whites English Chophouse Restaurant, Wheeler’s Fish & Chips, Churchill Bar & Lounge, and 3 function rooms for weddings, meetings and small functions which can cater for banquets up to 200 guests.
JOB SUMMARY:
Drive operational efficacy across all Food and Beverage outlets to run in a smooth and professional manner, ensuring customer satisfaction at all times, delivering high standards required by all customers. The role will be responsible for ensuring that the two Marco Pierre White dining outlets operate in accordance to the Marco Pierre White brand standards whilst adhering to all brand standards set by Hilton hotels.
GENERAL RESPONSIBILITIES:
Manage budgets, controlling costs, and maximizing \"per-head\" spendEnsure that all Food & Beverage outlets are adequately manned and weekly timesheets reflect business levelsAdapt, understand and implement Hilton brand standards throughout all Food & Beverage outlets within the hotelManage and supervise special events, busy trading periods and support the Food & Beverage team in performing according to agreed standards and by ensuring customer satisfaction at all times is of the highest levelHandle VIPs, resolving complex complaints, and maintaining service standardsEnsure regular staff training is taking place, improving skill of restaurant and bar staff and ensuring staff retention through a motivated teamDisplay a ‘hands on’ approach in the daily running of the Food & Beverage outlets and support the Supervisors in maintaining the highest possible service standards throughoutActively promote through sales training, advertising, in house promotions all Food & Beverage promotions and EventsAttend and contribute to all daily/weekly team meetingsOverseeing inventory, menu planning, and ensuring health and safety complianceEnsure all Health & Safety obligations are complied with and relevant training takes place on a 6 month basis, with Departmental Audits carried out on a monthly basisWe are looking for candidates with a strong work ethic and previous managerial or supervisory experience within a hotel food & beverage operation. You must have excellent customer focus and the ability to motivate and manage a team of staff.
Work Experience
Financial acumen: You must understand P&L (Profit & Loss) statements, manage labor costs, and perform cost analysisMenu Engineering: The ability to design menus that are cost-effective and balanced for high-margin salesTech Savvy: Proficiency in POS systems, reservation software (like OpenTable), and inventory management platformsCompliance & Safety: Deep knowledge of HACCP (Food Safety) and health regulations
