**Position Summary**
The Manager of Food & Beverage Business Development supports the development projects for food and beverage, taking care of any partnership deals and supporting solutions that drive incremental revenue.
**Scope**
Identifying reputable restaurant brands and celebrity chefs to grow Marriott’s global restaurant and bar partnership portfolio. A big part of this is the sourcing and management of third-party restaurant brand and operator relationships to support Marriott’s overall Food & Beverage strategy and add value and brand recognition to hotels across the Europe, Middle East & Africa region. The role is primarily focusing on managed properties, however, also to focus on franchise properties to add support and to grow F&B revenues to enable the department to utilize the funds to add resources.
**Expected Contributions**
+ Supporting the Director of F&B Business Development in delivering the EMEA F&B Business Development Partnership Strategy.
+ Maintain the Master Brand Book in the InDesign format; a library of two-page presentations for vetted third-party partners, both chefs and brands, working with third-party brands where possible to support preparation of presentation documents. This internal document can be viewed on MGS or individual two-page brand presentations can be used for presentations to properties and owners.
+ Update the Master Brand Book on MGS every 4–6 months with updated concepts.
+ Develop hotel pitch documents for third-party operators in collaboration with F&B Design & Development for new builds and existing properties.
+ Source suitable brands and investors for F&B spaces in existing properties and new developments, including License, Lease and Chef-Led Consultancy deals.
+ Prepare and present property and owner presentations for proposed brands to key stakeholders.
+ Research restaurant and customer trends, franchises, operators, and market research using key markets such as London, Dubai, and New York.
+ Collaborate with Development and Operations teams in the review, selection, and implementation of restaurant and bar partners across markets, brands, and locations.
+ Support negotiations and preparation of Letters of Intent, working with key stakeholders on all deal terms.
+ Work with Marriott’s Legal department on preparation and issuance of Lease, License, and Consultancy Agreements, leading the process from initial negotiation to signing.
+ Coordinate and track new and ongoing F&B project development across EMEA.
+ Coordinate and track contracts for all outsourced venues across EMEA.
+ Ensure regular communication with F&B Design & Development, Senior Directors of Operations, and internal stakeholders.
+ Assist in preparation of SOPs for all services offered, working with stakeholders to align procedures and requirements.
+ Work with Legal to prepare agreements required to offer services.
+ Work with F&B Support for billing of all projects.
**Candidate Profile – Key Talents and Experience Desired**
**Experience**
+ Experience working in the field of F&B consultancy or running own business.
+ Deep knowledge and understanding of global food & beverage concepts and celebrity chefs.
+ Experience preparing and reviewing legal agreements is preferred.
**Preferred Skills and Knowledge**
+ Strong command of the English language; additional languages are advantageous.
+ Demonstrated ability to work in a large international food and beverage and hotel management environment.
+ Strong presentation and public speaking skills.
+ Exceptional organizational and analytical skills with knowledge of restaurant ROI and P&L models.
+ Effective influencing, negotiation, and deal structuring skills.
+ Ability to prepare heads of terms documents and review commercial structures of legal agreements.
+ Confidence interfacing with senior management, owners, owner representatives, restaurant brand owners, and celebrity chefs.
+ Strong computer skills including Excel, PowerPoint, word processing, internet research, and financial tools (P&L, ROA, etc.).
+ Demonstrated understanding and use of market research and market trend data.
+ Ability to execute organizational mission, goals, and objectives through motivation and communication.
+ Ability to travel across EMEA (approximately 20–30%).
+ Absolute discretion and confidentiality regarding sensitive information.
**Education and Professional Certification**
+ University or Hotel School degree in Food & Beverage.
