Key Responsibilities
+ Prepare and cook food to order, following established recipes and presentation standards.
+ Delegate responsibilities to line staff and provide on-the-job training as directed.
+ Monitor food production to ensure accuracy, consistency, and adherence to standards.
+ Assist with daily food requisitions, stock levels, and storeroom procedures.
+ Control waste and portion sizes to achieve food cost targets.
+ Maintain cleanliness and sanitation in all kitchen areas.
+ Safely operate kitchen equipment, ensuring staff compliance with proper use.
+ Implement new menu presentations in collaboration with management.
+ Coordinate with banquet staff on contracts and event requirements.
+ Communicate effectively with Culinary Management regarding menu items, substitutions, and special requests.
+ Assist with inventory counts and follow HACCP and health & safety procedures.
+ Ensure proper use of cut gloves and compliance with all sanitation guidelines.
+ Complete opening, closing, and shift duties as assigned.
+ Perform additional tasks as assigned by management in support of team and business needs.
Qualifications
+ Culinary Journeyman Red Seal certificate (or equivalent).
+ Minimum of 5 years cooking experience, with at least 3 years as a 2nd Cook in a comparable environment.
+ Experience in bulk production, fine dining, buffets, banquets, catering, VIP event planning, and cost control.
+ Strong knowledge of food terminology, preparation, and safe handling.
+ Familiarity with ordering, purchasing, and inventory procedures.
+ Ability to operate a wide range of kitchen equipment including ranges, ovens, fryers, mixers, slicers, and smokers.
+ Computer literacy considered an asset.
+ Strong communication and leadership skills.
+ Ability to work varied shifts, including evenings, weekends, and holidays.
+ Physically capable of standing for extended periods and lifting up to 50 lbs.
Physical Demands
+ Frequent bending, reaching, standing, walking, speaking, and hearing.
+ Constant use of vision for safe and efficient food preparation.
+ Ability to lift, move, and transport up to 50 lbs on a regular basis
