THE TEAM
You will be a key member of the Rosewood Matakauri leadership team, reporting directly to the Cluster Director of Culinary and the Director of Operations, you will have a pivotal role in crafting seasonal, locally sourced cuisine, maximizing employee productivity, ensuring a profitable operation, delivering on our brand promise and upholding the highest standards in safety and cleanliness.
YOUR ROLE
As the Executive Chef at Rosewood Matakauri, you lead our culinary team to deliver an exceptional breakfast, lunch and dinner dining experience for our guests. You will be responsible for the overall operation of our kitchen, including menu development, food preparation, food presentation, employee management, and ensuring the highest standards of culinary excellence.
You will possess a hands-on approach, and be the face of F&B with a key focus on objectives to lead, mentor, innovate, train and retain the kitchen brigade, creating a future where people and place enrich one another.
With a vision and ethos of sharing New Zealand’s best local seasonal produce, producing award winning culinary experiences, being guest focused, whilst creating a sense of place combining food and beverage with nature and our environment.
Curating memorable moments whilst immersed in the role and its iconic surroundings; this role invites applicants who care for our environment, work intelligently limiting waste, are driven by change, can control costs, think outside the box, possess a modern approach to cookery, and where attention to detail is essential .

HOW YOU’LL MAKE THE PLACE
Delivers the brand promise and provide exceptional culinary experiences
Leads and mentors the Kitchen team and creates a collaborative culture based on mutual respect and trust
Reviews, implements and maintains operational standards; maximising efficiency and delivery of the highest standards of service
Seeks to improve productivity; strategically plans resourcing and offerings with all considerations (financial and guest experience) in mind
Procures local, fresh products for menus which offer the guests seasonal variety. Using Farm to table and head to toe philosophies.
Is responsible for financial management including budgeting, ordering and stock takes with accuracy and efficiency. Including payroll management for optimum performance. Manage and presents CAPEX projects.
Brings creativity and revenue generating concepts to the table. Follows through to make these happen.
Reviews menus & amenities, analyses recipes, determines food, labour, overhead costs and assigns prices to menu items. Directs food apportionment policy to control costs.
Manages stock and produce to ensure sustainable practices and compliance with the food safety plan.
Ensures health, hygiene and safety is the utmost priority for guests and associates. Maintains a high standard of practices, using CHOMP.
Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
Liaises with the other departments in the hotel on a daily basis to ensure smooth operations
Coaches Senior Chefs in the performance of their duties in accordance with policies and procedures.
Has a high focus on the Associate dining experience

We are looking for someone who is focused, visible and interactive with guests, possesses modern cookery trends, loves local ingredients, understands that less is more, champions sustainability and limits wastage, knows the importance of dietaries, creates sound solid relationships both internally and externally, has an eye for detail and who is calm, team focused, mentors, and trains to retain! In addition, we are looking for an Executive Chef with:
Previous, relevant experience as a Head or Executive Chef within a 5-star or luxury hotel environment
Proven record of managing, training, motivating and developing a team
A creative approach to the production of high-quality food and revenue generation
A strategic and business focused approach
Excellent communication skills
Ability to build effective relationships, internal and external
Excellent planning and organizational skills
A visible passion for service delivery and hospitality
Relevant culinary and management qualifications
A commitment to high standards, food quality & hygiene
Ability to drive and inspire teams; both immediate and remotely
Administrative management experience and sound financial acumen
Committed to the highest standards of food hygiene and workplace health & safety
A high degree of passion & professionalism
