What will I be doing?
As an EHS Manager you will be responsible for ensuring strict adherence to Food Safety standards and regulations governing all food handling operations, both in accordance with local legal government legal mandates and company policies. Additionally, directing the team to consistently undertake measures that prioritize the health, safety, and well-being of guests, Team Members, and any other individuals interacting with the Hotel's activities. Specifically, you will be responsible for performing the following tasks to the highest standards
Implement and monitor compliance with all prerequisite programs based on the HACCP Food Safety Management system and Abu Dhabi Municipality requirements on food safety.Conduct consistent periodic food safety inspections in food-related areas: receiving area, stores, kitchens, and F&D outlets, and communicate findings to relevant departments for action.Conduct daily inspections of all operational Food & Drinks areas, including the personal hygiene policy of the hotel and Team Member sickness exclusion program.Ensure timely completion, filing, review, and signing of HACCP records, including delivery, sanitation, storage, temperature control, and dishwashing.Lead HACCP System internal audits, prepare food safety internal audits, and communicate them to relevant departments for action.Initiate and execute non-conformity reports, corrective action requests, and management review reports as part of the HACCP system.Ensure all follow-up actions related to audit and inspection findings are delivered.Ensure monthly testing of food/water/ice samples by an accredited third-party laboratory, with reports kept on file.Conduct food labeling checks.Monitor production and preparation to ensure proper food control, including cooking, cooling, handling, and thawing of high-risk foods.Train Team Members to prevent cross-contamination between people, food, and garbage.Monitor buffet display, temperature control, and proper transport of high-risk items.Ensure refrigerators, freezers, cooked and reheated items, and holding temperatures, as well as storage and preparation standards.Overlook deep cleaning schedules and checklists with the stewarding team, evaluating their implementation.Ensure implementation and maintenance of the HACCP system according to established procedures and instructions.Report on the effectiveness, and the results of HACCP system to the General Manager for review and improvement, whenever required.Identify and record problems with products, processes, and the HACCP system, implementing solutions.Investigate guest complaints or allegations of Food Poisoning or Foodborne Illness internally with the culinary and Food and Drinks team.Initiate corrective actions in liaison with the Executive Chef and control nonconforming products until deviations regarding food safety are corrected.Monitor food suppliers to certify food hygiene and ensure receipt of appropriate items.Provide food control measurement templates to related outlets and maintain records with proper training and monitoring.Conduct consistent, timely training for all food handlers on food safety aspects.Lead Travel with Purpose initiatives as guided by Hilton.Initiate and execute sustainability projects to contribute to overall hotel purposeWhat are we looking for?
