Set across floors six to 21, the hotel features 202 luxurious rooms and suites; the Coast’s largest pool deck club; a stunning and substantial Mediterranean restaurant and vibrant, design-led spaces that celebrate local culture and craft. **Our F&B playground:** + Andaz Pool Club: the Coast’s largest pool deck club with private cabanas and al fresco dining + Mediterranean Brasserie & Bar: sun-washed flavour, grill and coastal classics from key regions will be totally reimagined, with nothing of its kind in the area + Hinterland Bar: bold cocktails, local spirits, low & no options, and refined bar snacks + Morning Bar: a high-energy ritual for body, mind and soul—coffee, juices, wellness-led bites + In room dining: all the classics in mind with a few hits from our venues, with a substantial wellbeing menu on offerNote: this is a rooms-led hotel with no major event spaces; experiences and outlets are the heroes, while some events will be held within our outlets and bespoke locations. **The Opportunity** We’re hiring a Director of Food & Beverage to lead, inspire and ignite our F&B vision from pre-opening through to best-in-market operations. This is a hands-on, owner-mindset role for a leader who won’t pass the buck—someone who rallies the pack, lives on the floor with guests and teams, and turns ideas into unforgettable experiences and strong results. **Key Responsibilities** **Pre-Opening** + Build the operation: outlet concepts, service journeys, staffing model, SOPs and OS&E + Recruit, coach and energise a diverse leadership team and frontline talent; embed Andaz culture + Partner with Executive Chef on menu direction, pricing, workflows and launch experiences + Set service standards: pace, polish, personality; design training and audition days + Establish compliance foundations: QLD liquor licensing, RSA, food safety (HACCP with Culinary), WHS and audit readiness + Create opening buzz: collaborate with Marketing/PR on content, partnerships and launch activations **Operating** + Be the face of F&B: visible leadership on the floor on key timings of the week as becomes established; guest engagement and real-time service recovery + Drive experience and revenue: calendar of activations, day-part strategies, pool club cabanas, LTOs and brand collaborations + Commercial performance: own P&Ls, forecasting, COGS and labour; engineer margins without compromising quality + Team excellence: develop leaders for the future; performance coaching, succession planning and recognition; key communicator + Standards and safety: uphold compliance, audit rigor, maintenance and cleanliness across all venues + Cross-functional leadership: partner with Sales, Marketing and Rooms to grow share, loyalty and reputation **Qualifications:** + Senior multi-outlet F&B leadership in 5-star luxury, upper-upscale or lifestyle hotels; pre-opening experience strongly preferred + Proven record of leading high-energy teams and delivering guest-obsessed, design-forward experiences + Commercial acumen: P&L ownership, menu engineering with Culinary, pricing, inventory and labour management + Creative instinct with operational discipline—equally strong in ideas and execution + Hands-on leader who takes accountability, solves problems fast and inspires confidence + Deep knowledge of beverage programs: cocktails, wine, local spirits, low/no trends and bar operations + Strong understanding of Australian compliance: QLD RSA, liquor licensing, WHS; familiar with HACCP alignment alongside Culinary + Excellent communication and stakeholder management; comfortable on camera and with media/partners + Full Australian working rights strongly preferred **Why Join Andaz Gold Coast – by Hyatt** + Shape the F&B identity of Australia’s first Andaz—and the Gold Coast’s most exciting lifestyle hotel, restaurants & bars + Values-driven culture: Empathy, Integrity, Respect, Inclusion, Experimentation and Wellbeing + Global career opportunities, generous hotel discounts, wellbeing programs and competitive leave benefits + A creative environment where your ideas become signature rituals and revenue wins **Location** On-site, Broadbeach, Gold Coast QLD. **How to Apply** Please submit your CV and a brief cover letter sharing a standout outlet launch or activation you’ve led, including commercial and guest-impact results.
