Andaz means “personal style”—and our culinary vision is no exception. Opening in mid-2026, Andaz Gold Coast will set a new benchmark for lifestyle luxury in Australia. Set across floors six to 21, the hotel features 202 luxurious rooms and suites; the Coast’s largest pool deck club; a stunning and substantial Mediterranean restaurant and vibrant, design-led spaces that celebrate local culture and craft.

The Opportunity

We’re hiring a Director of Food Beverage to lead, inspire and ignite our FB vision from pre-opening through to best-in-market operations. This is a hands-on, owner-mindset role for a leader who won’t pass the buck—someone who rallies the pack, lives on the floor with guests and teams, and turns ideas into unforgettable experiences and strong results.

Key Responsibilities

Pre-Opening

Build the operation: outlet concepts, service journeys, staffing model, SOPs and OSERecruit, coach and energise a diverse leadership team and frontline talent; embed Andaz culturePartner with Executive Chef on menu direction, pricing, workflows and launch experiencesSet service standards: pace, polish, personality; design training and audition daysEstablish compliance foundations: QLD liquor licensing, RSA, food safety (HACCP with Culinary), WHS and audit readinessCreate opening buzz: collaborate with Marketing/PR on content, partnerships and launch activations

Operating

Be the face of FB: visible leadership on the floor on key timings of the week as becomes established; guest engagement and real-time service recoveryDrive experience and revenue: calendar of activations, day-part strategies, pool club cabanas, LTOs and brand collaborationsCommercial performance: own PLs, forecasting, COGS and labour; engineer margins without compromising qualityTeam excellence: develop leaders for the future; performance coaching, succession planning and recognition; key communicatorStandards and safety: uphold compliance, audit rigor, maintenance and cleanliness across all venuesCross-functional leadership: partner with Sales, Marketing and Rooms to grow share, loyalty and reputation
