Director of Food & Beverage - Hilton Aruba Caribbean Resort & Casino

The Director of Food & Beverage provides strategic leadership and operational oversight for all Food & Beverage operations at Hilton Aruba Caribbean Resort & Casino. This includes restaurants, bars, lounges, banquet operations, beach and pool service, in-room dining, and new dining concepts introduced as part of the resort’s ongoing enhancement and expansion projects.

 

This position plays a critical role in positioning the resort as one of the leading culinary destinations in Aruba, delivering exceptional dining experiences that align with Hilton brand standards and the expectations of international luxury-resort clientele.

 

The Director of Food & Beverage will also lead the F&B components of the Westerly, the resort’s newest oceanfront tower, including the signature Terrace on 10 rooftop lounge, while ensuring seamless collaboration with the Executive Chef, Sales & Marketing, Operations, and other departments to drive revenue growth, guest satisfaction, and operational excellence.

What will I be doing?
The Director of Food & Beverage oversees all Food & Beverage outlets across Hilton Aruba Caribbean Resort & Casino, including but not limited to:

·        Signature and specialty restaurants

·        Casual dining venues

·        Beachfront and poolside dining outlets

·        Lobby bars and lounges

·        Banquet and event catering operations

·        In-room dining services

·        Terrace on 10 rooftop dining and lounge experience

·        Additional venues introduced through the Westerly Tower expansion

 

The role requires the ability to manage complex resort Food & Beverage operations across multiple venues while maintaining high standards of quality, service, and financial performance.

 

Position Summary

The Director of Food & Beverage is responsible for planning, organizing, directing, and controlling all Food & Beverage operations to ensure exceptional guest experience and strong financial performance.

This position leads the development and implementation of innovative culinary and beverage programs while ensuring operational excellence across all outlets.

The Director of Food & Beverage will work closely with the Executive Chef and Food & Beverage leadership team to maintain high standards of food quality, service, cleanliness, and operational efficiency while maximizing revenue and profitability.

 

Essential Responsibilities

Strategic Leadership

·        Provide strategic direction and leadership for all Food & Beverage operations across the resort.

·        Support the continued growth and positioning of Hilton Aruba as a leading luxury hospitality destination in the Caribbean.

·        Lead the operational integration of new Food & Beverage concepts introduced through the Westerly Tower expansion.

·        Develop long-term strategies for culinary innovation, guest engagement, and revenue growth.

 

 

 

 

Resort Expansion & New Concepts

·        Lead the Food & Beverage strategy and operations supporting The Westerly oceanfront tower, including its elevated guest experience and premium offerings.

·        Oversee the successful launch and operation of Terrace on 10, the adults-focused rooftop lounge featuring signature cocktails, curated culinary offerings, and sunset views.

·        Support the development and evolution of newly introduced dining venues as part of the resort enhancement program.

·        Ensure all new concepts align with Hilton brand standards and luxury guest expectations.

 

Operational Management

·        Oversee the daily operation of all restaurants, bars, lounges, banquet operations, and in-room dining services.

·        Ensure consistent service delivery across all outlets, maintaining the highest hospitality standards.

·        Monitor operational efficiency, service quality, and guest satisfaction.

·        Develop and implement operational procedures that support efficient service and profitability.

 

Financial Performance

·        Develop and manage the annual Food & Beverage operating budget.

·        Monitor financial performance including revenue, food cost, beverage cost, and labor expenses.

·        Implement effective cost control measures while maintaining high service standards.

·        Identify opportunities to increase revenue through promotions, events, menu innovation, and strategic partnerships.

 

Culinary & Beverage Development

·        Collaborate closely with the Executive Chef and culinary leadership to develop innovative menus and dining concepts.

·        Support the creation of distinctive culinary and beverage experiences that reflect international trends and local influences.

·        Promote the use of local ingredients and Aruban culinary heritage where appropriate.

·        Oversee beverage programming including wine lists, craft cocktails, and premium spirits offerings.

 

Team Leadership & Development

·        Recruit, train, and develop Food & Beverage leadership and team members.

·        Promote Hilton’s culture of hospitality, teamwork, and excellence.

·        Provide coaching, mentoring, and performance management for department leaders.

·        Foster a positive work environment that encourages professional growth and engagement.

 

Guest Experience

·        Ensure Food & Beverage operations consistently deliver exceptional guest experiences.

·        Monitor guest feedback through Hilton systems and direct guest interaction.

·        Identify and address service opportunities to continuously improve guest satisfaction scores.

·        Ensure all outlets deliver service standards consistent with a luxury international resort.

 

Compliance & Standards

·        Ensure compliance with Hilton brand standards, policies, and procedures.

·        Maintain adherence to local laws and regulations regarding food safety, sanitation, health standards, and alcohol service.

·        Implement and monitor food safety programs and sanitation procedures.

·        Ensure compliance with all relevant Aruba government regulations.

 

Supportive Functions

In addition to the essential responsibilities, the Director of Food & Beverage may also:

·        Participate in Heads of Department meetings and strategic planning initiatives.

·        Collaborate with Sales & Marketing to develop Food & Beverage promotions and special events.

·        Represent the resort in community relations and industry events.

·        Assist with special events, VIP functions, and resort-wide initiatives.

·        Serve as Manager on Duty when required.

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions: 

International experience required.

Experience working with a recognized international hotel brand.

Luxury resort or upscale full-service hotel experience.

Proven experience managing multi-outlet Food & Beverage operations.

Experience overseeing large banquet and event operations.

 

Bachelor's degree in hospitality management, Hotel Management, Business Administration, or a related field required.Passion for delivering exceptional levels of guest service

Proficiency in Microsoft Office (Word, Excel, PowerPoint). 

Experience with hospitality management systems.

Knowledge of point-of-sale and inventory control systems.
