Minimum Qualifications Two years of food service experience or training in an institutional, hospital, military or commercial food service operation; OR Twenty-four semester hours in food and nutrition, dietetics, or institutional management; OR Possession of a permanent or provisional Louisiana dietitian/nutritionist license plus one year of licensed dietetics experience. Job Duties and Other Information Job Duties: + Supervises Juvenile Corrections Food Production Workers, including training new staff on kitchen policies, food preparation procedures, and safety protocols. + Oversees daily food preparation and cooking, ensuring proper methods, portion control, and adherence to approved menus. + Maintains kitchen cleanliness and equipment sanitation, directing staff in cleaning the kitchen, dining area, and all food service equipment. + Ensures compliance with security regulations, monitoring both staff and student offenders in all food service areas. + Manages food inventory and storage, including requisitioning, receiving, and securely storing food supplies.
