Job Description
Position Purpose
The primary purpose of this position is to prepare and serve high quality meals, according to menus, in a timely manner to meet meal schedules; supervise the operation and personnel in the absence of the Nutrition Services Manager; assist in purchasing and storage of foods, as needed, and follow established rules and regulations for long-term care and safe food production.
Specific Duties and Responsibilities
Policies and Procedures
+ Maintain confidentiality of residents, family members, coworkers, and Immanuel Living
+ Understand and support the philosophy, policies, and standards of Immanuel Living
+ Promote positive customer service
+ Maintain quality of resident care, including compliance with Corporate policies and procedures and State and Federal guidelines
+ Follow Corporate and facility department policies and procedures
Position Duties
+ Possess a high degree of personal cleanliness and hygiene
+ Manage the Nutrition Services Department in the absence of the Nutrition Services Manager and/or Assistant Nutrition Services Manager
+ Comply with long-term care regulations and established department policies and procedures
+ Assist in maintaining a safe and sanitary department
+ Maintain security of the department
+ Keep work areas clean and in good order, and assist with scheduled cleaning duties
+ Use and teach proper food handling techniques
+ Meet time schedules for serving of meals and snacks
+ Review menus before preparing meals and serve them properly and attractively
+ Follow standardized recipes and special order diets
+ Prepare and serve foods for therapeutic diets, according to planned menus
+ Make menu substitutions as necessary and record them in the designated place
+ Assist in serving meals, using proper portions and special diet items
+ Assist in receiving and storing incoming food and supplies
+ Date, label, and store food properly
+ Report food, supply, and equipment needs to the Nutrition Services Manager
+ Perform other duties, as assigned
Documentation and Communication
+ Communicate with supervisor and participate in training and/or meetings that help facilitate departmental communication process
+ Communicate with others in a considerate manner
Other Duties and Responsibilities
+ Function effectively as a team member
+ Maintain understanding, patience, and tact in dealing with residents, resident families, and coworkers
+ Maintain good working relationships with other staff
+ Ensure maintenance of a safe living and working environment for residents and staff
+ Attend and participate in in-service educational classes, on-the-job training programs, etc., as scheduled or required (eg. safety, driving, field of recreation, geriatrics, long-term care)
+ Attend staff and departmental meetings, as directed
+ Maintain regular work attendance and follow established work schedule. Days and hours of shifts are rotated accordingly; weekends may rotate as needed.

+ Read, write, and speak basic English
+ Read and comprehend basic instructions and present information to others

+ Basic counting skills

+ Ability to apply common sense and understanding to carry out instructions furnished in written, oral, or diagram form
+ Ability to deal with problems involving several concrete variables in standardized situations
+ Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists
+ Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form
Specialized Office Equipment
+ Operate multi-line phone to place, receive or transfer calls, or to retrieve voice mail messages.
Specialized Kitchen Equipment
+ Utilize, in a safe manner, kitchen equipment, such as knives, blenders, food choppers, slicers, and heating equipment.
Other Required Knowledge, Skills, or Abilities
+ Ability to effectively work and communicate with a wide range of individuals from all socio-economic groups, including geriatric residents and people with special needs
+ Ability to read, interpret, and implement documents, such as governmental regulations, rules, and procedure manuals
+ Ability to work with minimal supervision and effectively manage workflow
+ Ability to make independent decisions when circumstances warrant such action
+ Ability to respond effectively to the most sensitive inquiries or complaints from residents and/or employees
Professional Licenses or Certifications Required by Law, Rule, or Regulation for Performing this Position
+ Completion of Serve Safe™ program upon entry into this position.
Education and Experience
+ At least 6 months of experience in this field preferred
+ Experience in large-scale cooking operation, with supervisory skills, is preferable
Essential Physical, mental, and Emotional Requirements
+ The employee must be at least 18 years of age, as position operates potentially hazardous equipment.
+ The employee must be able to perform multiple tasks simultaneously and be able to work under time and/or deadline pressures.
+ While performing the duties of this position, the employee is frequently required to stand at least 90% of the shift; use hands to finger; handle or feel; reach with hands and arms; stoop, kneel, bend, squat, crouch, or crawl; talk and hear.
+ The employee must frequently lift up to 10 pounds, occasionally to frequently lift up to 20 pounds, occasionally lift up to 35 pounds, and rarely lift up to 50 pounds.
+ The employee must occasionally reach above shoulder height, occasionally reach from chest to shoulder, frequently reach from waist to shoulder, and occasionally reach below waist level.
+ The employee must occasionally push / pull up to 20 pounds.
+ Specific vision abilities required of this position include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
Supervision
+ This position reports to the Nutrition Services Manager.
+ This position operates under general supervision.
+ The employee’s work is primarily assigned by daily workflow and operations.
+ The employee is authorized to make decisions as to the timing and sequence of work and the work is performed according to established policies and procedures and/or within applicable laws, rules, and regulations governing the tasks being performed.
+ This position supervises Nutrition Services staff, in the absence of the Nutrition Services Manager and/or Assistant Nutrition Services Manager, by assigning and checking work.

+ Decisions and/or errors primarily affect other employees in the Communities, but on occasion may affect all employees.
Judgment Required in Decision-making
+ Job duties typically involve frequently changing conditions and problems, requiring considerable judgment in applying factual background and fundamental principles to the development of approaches and techniques for the solution of problems.
Exception Authority
+ This position cannot authorize exceptions to corporate policy or procedure.
Personal Contacts
+ In an effective manner, this position maintains daily contact and interaction with coworkers, but not the public. Weekly or infrequent interaction with the public may occur.
+ This position interacts with department managers and administrators on a daily basis.
Working Conditions
+ This position works in a temperature-controlled facility environment.
+ This position is exposed, on a weekly or less frequent basis, to the following: biological fluids (including but not limited to vomit, urine, and feces), blood-borne pathogens, upset and/or angry residents and/or family members, risk of cuts, burns, shock, or other minor injuries (not requiring hospitalization); unpleasant substances, odors, or noises.
