Commis Tourier / Boulanger

A Commis Tourier / Baker will support the Pastry Chef and kitchen brigade to deliver high-quality bakery and viennoiserie production, ensuring all products meet the luxury standards of Conrad Bora Bora Nui.

What will I be doing?

As a Commis Tourier / Baker, you are an integral part of the pastry and bakery team, contributing daily to the production of breads and viennoiseries for all outlets. You will support the Pastry Chef and senior Chefs by performing the following tasks to the highest standards:

Ensure consistent production of viennoiseries, breads, and bakery items in line with the hotel's quality standardsAssist in the preparation, mise en place, and daily productionExecute basic preparations such as doughs, creams, and battersProduce up to 300 viennoiseries per day across a range of varietiesApply and master lamination techniques (puff pastry, croissant dough, laminated brioche, etc.)Maintain product quality, freshness, and proper storage at all timesManage stock levels and minimize food wasteEnsure full compliance with hygiene and food safety standards (HACCP)Maintain a clean, organized, and efficient workstationCollaborate with the entire team to ensure smooth and efficient service

A relevant qualification in pastry, bakery, or equivalent experienceGood knowledge of basic bakery and viennoiserie techniquesStrong skills in lamination (puff pastry, croissant dough, laminated brioche, etc.)Previous experience in a similar roleAbility to work independently with good organization and attention to detailA genuine passion for the craft, with creativity and precisionA positive team spirit, flexibility, and adaptabilityA solid understanding of hygiene and food safety standards (HACCP)
