Job Description

We are seeking a talented and experienced Chinese Head Chef to lead our culinary team at Avani Kota Kinabalu Hotel. As the Chinese Head Chef, you will be responsible for overseeing all aspects of our Chinese kitchen operations, creating innovative menus, and maintaining the highest standards of food quality and presentation.

Develop and implement new Chinese menu items, incorporating local Malaysian ingredients and flavors when appropriateLead and mentor a team of kitchen staff, fostering a positive and productive work environmentEnsure compliance with food safety and hygiene standards in all kitchen operationsManage kitchen inventory, costs, and budgets to maintain profitabilityCollaborate with the management team to enhance overall dining experiencesOversee food preparation, plating, and quality control for all Chinese dishesStay updated on culinary trends and incorporate innovative techniques into menu offeringsParticipate in staff recruitment, training, and performance evaluationsMaintain relationships with local suppliers to source high-quality ingredients

QualificationsProven experience of 5-7 years as a Chinese chef, with at least 2-3 years in a leadership roleExpert knowledge of Chinese cuisine, cooking techniques, and culinary traditionsStrong leadership and team management skillsProficiency in menu planning, cost control, and inventory managementExcellent communication and interpersonal skillsAbility to work in a fast-paced, high-pressure environmentCulinary degree or diploma preferredCurrent food safety certificationFamiliarity with Malaysian cuisine and local ingredients is a plusFluency in English; knowledge of Mandarin or Cantonese is advantageousDemonstrated creativity and ability to innovate in Chinese cuisineStrong problem-solving and decision-making skills
