Ekstedt at The Yard focuses on Scandinavian cooking techniques using the very best seasonal local ingredients; featuring a menu of signature dishes, alongside an inventive cocktail menu and extensive wine list. The open kitchen, which feels like an extension of the restaurant floor, allows diners to sit at the heart of the action.
Duties and responsibilities related to the role:
As a Chef de Partie, you will lead your section with precision, creativity, and consistency. You’ll be expected to uphold the highest culinary standards, mentor junior chefs, and contribute to the seamless execution of our diverse menus.
Section Leadership: Manage and oversee a specific kitchen section, ensuring it is well-prepared, organised, and operating at the highest standard.
Menu Execution: Prepare and present dishes with consistency in flavour, texture, and presentation, contributing to an exceptional guest dining experience.
Team Development: Support and guide Demi Chefs and Commis Chefs, fostering a collaborative and growth-oriented kitchen environment.
Inventory Ordering: Monitor stock levels, assist with ordering, and ensure proper storage and rotation to maintain freshness and reduce waste.
Compliance Hygiene: Uphold rigorous food safety and hygiene standards in line with HACCP and company policies.
Operational Efficiency: Maintain cleanliness and functionality of kitchen equipment and workstations, ensuring smooth service across all meal periods.
Innovation Creativity: Contribute ideas to menu development, seasonal specials, and unique culinary experiences that reflect our brand’s identity.
Experience Required
Proven experience in hotel culinary operations, with the ability to manage and lead a section independently
Strong knowledge of food preparation techniques, kitchen operations, and HACCP compliance
Excellent communication and leadership skills to support and inspire junior team members
Ability to work efficiently in a fast-paced, multi-outlet environment
Experience Preferred
Previous experience in a Chef de Partie role within a luxury hotel or fine dining restaurant
Proven work experience or exposure to London-based hotels, with knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests
Level 2 or higher food safety certification is preferred, with strict adherence to health and safety regulations
