Assume in all sections of the kitchen the control of food requisitioning, preparation, and waste for the purpose of maintaining the proper food cost. Directly maximize team productivity to minimize payroll costs. Conditions of work The Chef De Cuisine is in charge of controlling the sections within the kitchen such as vegetable garnish, meat station, cold appetizer, pastry section, etc. He also will work any shift as requested and assist in private event operations, as required, including weekends and holidays. Flexible and good in multi-tasking. Able to work under pressure. Some heavy lifting may be required while on duty. Role overview Control the culinary operations in different sections. Ensure all areas and sections are maintained according to Alila Jabal Akhdar F&B Culinary standards. Supervise, prepare, and/or cook any food on a daily basis according to business requirements. Maintain an efficient workflow by adhering to the Sequence of Service and all time frames and standards detailed in relevant SOPs in the F&B standards manual. Should be flexible and ready to work any shift given as per the requirement of the operation. Communication The Chef De Cuisine interacts daily with food suppliers, Jr. Sous Chef, Chef de Partie, Demi-Chef, in-house guests, and junior rank-in-file Commis within their respective kitchens. Kitchen management. All outlet staff members. Main duties Reports on time to duty. Ensures proper daily ingredient preparation of menu items within the kitchen section. Directly manages food production and waste generated in the kitchen. Gives food preparation tasks to the team sections and monitors that they are carried out in the correct manner. Keeps the sections clean and sanitized, while following HACCP standards. Any other duties as may reasonably be requested by the management. Meet all needs and requests of customers within acceptable enterprise timeframes. Identify and take all opportunities to enhance the quality of service. Offer assistance to colleagues when required, to ensure designated work goals are met. Demonstrate trust, support, and respect towards team members in day-to-day work activities. Conduct communication with colleagues in a polite, professional, and friendly manner. Practice high standards of personal presentation in accordance with Alila Jabal Akhdar F&B Culinary grooming and presentation standards. Seek assistance from other team members, supervisors, and managers when required. Look for ways to go above and beyond the customers' expectations. Have a full understanding of the brand concept, history, and vision and can explain when asked for. Have completed basic food hygiene training. Ensure that brand standards in regard to hygiene are adhered to at all times in the kitchen, i.e., labels, FIFO. Ensure that all side duties and cleaning schedules are completed as per daily checklists. Complete all checklists as required daily, weekly, and monthly for the kitchen. Be proactive in attending all trainings as required by the business. Actively look for ways in which they can develop their career. Communicate to managers any issues immediately. Actively engage with colleagues at all times. Administration Review the notice board and outlet briefing sheets on a daily basis to be well informed of Alila Jabal Akhdar F&B Culinary events, city information, rosters, sold-out items, daily specials, and any other information that may be relevant to the job. Complete cleaning, opening, and closing checklists when instructed by senior colleagues. Assist in recording inventories and stock-takes as required.
