Job Overview Responsible for food preparation, cooking and service to the highest standards as per the company and MOD requirements; to be motivated and participate in training programmes as directed by the Head Chef and Soft Services Manager; will maintain high standards of personal presentation at front of house and ensure all COSHH, Health and Safety regulations pertinent to the position are met.
Main Duties
Maintain cleanliness and hygiene standards for the areas of your responsibility. Will wear suitable clothing, PPE including footwear, head dress. To have full knowledge of all areas which have to be covered in the course of duty. Assist the Head Chef in the ordering, control and correct storage of food stuffs. Reporting of defects to Head Chef. The preparation, cooking and service of food as directed by the Chef in charge, whilst complying to the food safety act, portion control and presentation standards. Ensure that the team adhere to the correct disposal and storage of all food items as directed by the Head Chef. Ensure that temperatures of fridges, freezers, hot cabinets and servery are taken and recorded To ensure that all food served under your control are served and held at the required temperatures (probed and recorded). To work at Inflight Catering preparing meals for the aircraft passengers/crew if required. During periods of staff shortages, work as a kitchen assistant. To maintain and manage the required high operational and personal standard hygiene and presentation within the team at all times in compliance with the Food Safety Act. Compliance by you and your team to the Health & Safety Act and COSHH regulations. Ensure that assured safe catering principals are followed at all times encompassing legal requirements of the Food Safety Act. To ensure that working areas are kept clean and tidy adopting a ‘clean as you go' policy within the kitchen. Ensure that the kitchen area you are working in is clean and hygienic at all times. Ensure that decanting methods are strictly adhered to. Ensure that accurate methods are maintained as directed by the chef in charge. Ensure that the handing over procedures and opening up/closing down procedures are complied with, with an emphasis on safety and security. To develop one's own skills/knowledge within the position. To maintain strict security precautions to safeguard equipment and to inform the supervisor of any deficiencies or breakages. Maintenance of the company Quality Control Procedures. Good standard of education. Experience of working in a hotel or similar kitchen. Food Safety training. COSHH and manual handling awareness training. Experience of working in a military environment Working towards a certificate in food preparation and cooking Driving licence A strong interest in food. Energy, Enthusiasm and a passion for cooking. Ability to carry out task quickly and competently. Prepared to work un-social hours The role may include some form of strenuous physical activity; therefore, the incumbent must have the ability to undertake such duties Will be well-organized, a motivated team player who is keen to learn. Has a ‘can do' mature attitude, is flexible, reliable and self-motivated; will have an open approach, pass on knowledge, their experience and show willingness to assist others.
