Duties and responsibilities related to the Breakfast Chef de Partie role
As a Breakfast Chef de Partie, you will play a key role in leading your section with precision, creativity, and consistency during early morning shifts. You’ll be expected to uphold the highest culinary standards, mentor junior chefs, and contribute to the smooth execution of our breakfast menus.
Section Leadership: Manage and oversee a specific kitchen section during breakfast service, ensuring readiness, organisation, and excellence.
Menu Execution: Prepare and present breakfast dishes to the highest standards, maintaining consistency in flavour, texture, and visual appeal across all morning offerings.
Team Development: Support and guide Breakfast Demi Chefs and Commis Chefs, fostering a culture of learning and collaboration.
Inventory Ordering: Monitor stock levels, place orders, and ensure proper storage and rotation to minimise waste and maintain freshness.
Compliance Hygiene: Uphold rigorous food safety and hygiene standards in line with HACCP and company policies.
Operational Efficiency: Maintain equipment and workstations, ensuring smooth breakfast service and adherence to kitchen protocols.
Innovation Creativity: Contribute ideas to breakfast menu development, morning specials, and guest experiences tailored to early risers.
About You
Proven experience in hotel culinary operations, with the ability to manage and lead a section independently
Strong knowledge of food preparation techniques, kitchen operations, and HACCP compliance
Excellent communication and leadership skills to support and inspire junior team members
Ability to work independently and efficiently during early morning shifts in a fast-paced, multi-outlet environment
Experience Preferred
Previous experience in a Chef de Partie role within a luxury hotel or fine dining restaurant
Proven work experience or exposure to London-based hotels, with knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests
Level 2 or higher certification is preferred, with strict adherence to health and safety regulations.
