役割概要ホテル全体のペストリー・ベーカリー運営の統括デザートの品質・見た目・衛生(HACCP)の管理メニュー開発・原価管理・プロモーション支援チームの指導・育成食材・在庫・機器管理主な業務内容デザートの品質・味・盛り付けの維持エグゼクティブシェフと連携したメニュー開発・商品開発食材コスト・ロスの管理と収益性向上衛生・安全・清潔基準の遵守スタッフ教育およびSOPの徹底日々のペストリー業務・製造の統括宴会・レストラン・スチュワード部門との連携食材・設備・製品の品質チェックイベント・試食・プロモーション対応

An Executive Pastry Chef performs all Pastry Kitchen and Bakery related work, assisting the Executive Sous Chef in the day-to-day operation of the kitchen. This role assumes total responsibility, control, checks and supervises the Pastry Kitchen and Bakery as assigned by the Executive Chef. He / she will assume the responsibility for the “on the job” training function.  

Role Summary Lead pastry and bakery operations across the hotelEnsure high standards in dessert quality, presentation, and hygiene (HACCP)Support menu development, costing, and promotionsTrain and supervise pastry team membersManage food cost, inventory, and equipmentKey ResponsibilitiesMaintain consistent quality, taste, and presentation of all pastry itemsDevelop dessert menus and new products with Executive Chef teamMonitor food cost, wastage, and profitabilityEnsure hygiene, safety, and cleanliness standardsTrain staff and enforce SOPs and proper equipment usageOversee daily pastry operations and production planningCoordinate with other departments (banquets, outlets, stewarding)Inspect ingredients, equipment, and finished productsSupport events, tastings, and special promotions

\na {\n text-decoration: none;\n color: #464feb;\n}\ntr th, tr td {\n border: 1px solid #e6e6e6;\n}\ntr th {\n background-color: #f5f5f5;\n}\n応募資格高卒以上4~5つ星ホテルまたは高級レストランでのペストリーシェフ経験 3~5年食品衛生資格・健康証明HACCPの知識外資系/国際ホテルでの経験歓迎製菓・ホスピタリティ分野の専門教育があれば尚可 QualificationsHigh school diploma or above3–5 years’ experience as Pastry Chef in a 4–5 star hotel or high-end restaurantGood communicationValid food hygiene certification and health certificateKnowledge of HACCPExperience in international hotel chains preferredCulinary or hospitality education is a plus
